Wine and Winemaking – This 2021 Columbia Valley Cabernet Sauvignon is a new addition to our line-up. It is a lower-priced, slightly lighter-bodied, more immediately approachable cabernet sauvignon option for our customers. However, the wine receives the same attention and care in the cellar as our vineyard designate bottlings. Grapes for this wine were sourced from outstanding vineyards throughout the Columbia Valley including Klipsun, Les Collines, Phinny Hill, and Zephyr Ridge. Lots were punched down twice daily during fermentation and the must was then pressed and wine racked to tote. After settling, wine was racked to barrel where malolactic fermentation occurred. The wine aged for 22 months in French oak barrels (40% new) and was racked three times prior to bottling on August 25, 2023.
Composition - 75% Cabernet Sauvignon, 17% Petit Verdot, 8% Merlot
Notes from the Tasting Panel – In the glass, the wine presents a lovely core of purple and violet. After a swirl, aromas of Luxardo cherries, blueberries, cassis, cigar box, pencil shavings, and menthol are present. On the palate, this medium-bodied wine offers a harmonious balance of dark fruit, firm tannins, and lively acidity that lingers with a spicy note. Enjoy this wine over the next 5-7 years.
